My oil free savory granola with avocado dressing. Lately I have been seeing savory granolas popping up on Instagram and on blogs, so I wanted to create my own granola bursting with flavour and perfect on top of salads, soups, stews or just as it is. I have paired the granola with a delicious herbs and avocado dressing. The pair will make a simple crispy lettuce into a festive salad. Try it and you will be hooked.
ingredients
- 1 cup of glutenfree oat flakes
- 1 cup puffed quinoa pops
- 1/2 cup of sunflower seeds
- 1/4 cup of black sesame seeds
- 1/4 cup of white sesame seeds
- 1 tablespoon of spicy Dijon mustard
- 3 tablespoons of tamari or Nama shoyu
- 1 tablespoon of maple syrup or coconut syrup
- 1 tablespoon of flaxseeds
- 3 tablespoons of water
Preheat oven on 180 C or 350 F. Prepare a flax egg by combining 1 tablespoon of flaxseeds with 3 tablespoons of water, mix well. Set aside. Combine all dry ingredients. Mix all the wet ingredients, including the flax egg until smooth. Combine all ingredients and put onto a baking paper lined tin. Bake for 20 minutes or until golden brown mixing regularly to prevent burning. Let it cool completely and store in a airtight container.
This granola is delicious sprinkled on salads, soups, stews or just a quick snack.
green herby avocado dressing
ingredients
- 1 ripe avocado, pitted and chopped
- 1/3 cup of lemon juice
- 1/4 cup raw apple cider vinegar
- 1/4 cup of cilantro, washed and chopped
- 1/4 cup parsley, washed and chopped
- 1/4 cup tarragon, washed and chopped
- 2 tablespoons of tamari or Nama shoyu
- 3 spring onions chopped
- 1/2 – 1 cup of water
- salt and pepper to taste
ingredients

- 1/4 cup raw apple cider vinegar
- 1/4 cup of cilantro, washed and chopped
- 1/4 cup parsley, washed and chopped

- 3 spring onions chopped
- 1/2 – 1 cup of water
- salt and pepper to taste
Blend all ingredients with 1/2 cup of water until smooth, add additional water for a lighter dressing. Taste and if needed add salt and pepper to taste.
