blood orange with rose water parfait

All the colours of the rainbow in this recipe, it’s a nice sweet fruit explosion in a bowl.


  • coconut yoghurt
  • 3 blood oranges, peeled
  • 2 tablespoons of chia seeds
  • 1 teaspoon of rose water
  • Additional sweetener like maple syrup
  • half a mango, cubed
  • 1 passion fruit
  • amaranth or quinoa pops
  • a couple of frozen berries
  • coconut flakes
  • broccoli sprouts

To make the chia jam: combine 3 peeled blood oranges, with the rose water in a blender. Taste it to check if it needs additional sweetener. Stir in the chia seeds and stir regularly. It will be ready after 15 minutes or make it the night before and leave it in the fridge overnight.

To assemble you need two glasses or bowls. Put in some coconut yoghurt, add 2-3 tablespoons of blood orange rose water jam and stir lightly until you will see soft swirls. Top with a stopped out passion fruit, 1/4 mango cubes, amaranth pops, coconut flakes, frozen berries and some broccoli sprouts!
